I love s’mores and all things s’mores-flavored. I’ve previously shared my favorite s’mores oatmeal and Nutella S’mores Crêpes, and today I have another chocolaty, marshmallow-y breakfast coming your way!
These pancakes are a little extra (okay, maybe a lot), but they’re still easy to make and there is no bonfire required. 😊
You’ll just need a skillet and stovetop to cook your pancakes, a broiler and oven-safe dish to toast your marshmallows, and a fork to dig in!
Here are the elements of these pancakes:
- Graham cracker pancakes
- Chopped Hershey bars
- Toasted mini marshmallows
- Milk chocolate ganache for drizzling
- Crushed graham crackers for garnishing
You don’t have to include every one of these if you don’t want to, but I like as many layers of flavor as possible, so that’s what I included here! You could easily leave out the chopped chocolate, skip the graham cracker garnish, or omit the ganache in favor of a traditional pancake syrup. If you don’t have Hershey bars, use milk chocolate chips or whatever milk chocolate you have on hand. I just like Hershey’s the best when it comes to s’mores!
I’m not ashamed to admit that these taste more like dessert than breakfast, but that’s precisely why I like them. They’re a decadent way to celebrate the end of summer or the first day of school. I don’t know many kids who’d turn down pancakes with candy bars in them!
We always used to have my mom’s homemade caramel rolls for breakfast on the first day of school and those are my absolute favorite, but these pancakes are up there on my breakfast list, too. I am returning to school this year as well, and these may just have to make an appearance at my breakfast table! For brain fuel and all. 😊 I’ll probably need it since I’ve been out of school for almost 10 years!

S'MORES PANCAKES Yield: 4 servings (one large pancake or two small pancakes per serving) INGREDIENTS: 1/2 cup chopped Hershey chocolate bars or milk chocolate chips 1/4 cup heavy cream 3/4 cup flour 1 rectangular graham cracker, crushed 1 tsp. baking soda 1/4 tsp. salt 1 cup buttermilk 2 Tbsp. butter, melted 1 egg 1 tsp. vanilla extract 1 Hershey bar, chopped 1 cup mini marshmallows Extra crushed graham crackers, for garnish INSTRUCTIONS: First, prepare ganache. Place chopped milk chocolate and cream in a small microwave-safe bowl. Microwave for 30 seconds, stir, and repeat until chocolate is mostly melted. Continue stirring until smooth. Set aside. To make pancakes, preheat a small skillet over medium heat. In a large bowl, whisk flour, graham cracker crumbs, baking soda and salt. Stir in buttermilk, egg, vanilla and melted butter until just combined. A few clumps are fine. Grease skillet with a little oil and pour batter into skillet to make a pancake in the size you want. Let cook until the edges start to get bubbly, about a minute or two, then flip. Top with chopped Hershey bars and cook until pancake is golden brown. Repeat with remaining batter. To serve, plate pancakes and top each serving with a handful of mini marshmallows. Broil on high for about a minute or until marshmallows are golden brown. (Be careful - plate will be hot!) Serve pancakes with prepared chocolate ganache and top with more crushed graham crackers, if desired.
