Healthier Broccoli Salad

Broccoli salad is one of those summer picnic classics that’s easy to tote everywhere at this time of year. It blends a handful of mismatched ingredients into something surprisingly tasty: broccoli and grapes, vinegar and sugar, cauliflower and bacon…sufficient doses of sweet, salty, healthy…and not-so healthy.

I like to make a version that’s slightly less artery-clogging.

Roasted Asparagus with Garlic and Sea Salt

I’m not sure I’ll ever get tired of roasted veggies. Even when it’s the dead of winter and I can’t find very fresh produce around the Minnesota prairie, still I roast.

That was the case recently. Although asparagus season is just around the corner – hopefully even here, where we are currently preparing for yet another round of snow!

Thai Chicken and Rice Stacks

In college, my school’s cafeteria boasted a beautiful exterior but, for the most part, less-than-impressive meals. The all-you-can-eat restaurant had plenty of stations serving burgers, pizza, and fried chicken (I went to college in the south, after all), but none of it was exactly mouthwatering. The desserts, which were stunning works of art on the outside, consisted primarily of Cool Whip and instant pudding.

Garlic Roasted Broccoli Florets
