Chicken Parmesan

A few years ago, my family took a missions trip to Panama. Aside from the questionable sanitation of our critter-filled hotel rooms and the language barrier (my four years of high school French didn’t help me out too much), it was a very rewarding experience.

I’ll never forget the laughter, the sweet young faces that were so excited to see us…

And the Chicken Parmesan.

Thai Chicken and Rice Stacks

In college, my school’s cafeteria boasted a beautiful exterior but, for the most part, less-than-impressive meals. The all-you-can-eat restaurant had plenty of stations serving burgers, pizza, and fried chicken (I went to college in the south, after all), but none of it was exactly mouthwatering. The desserts, which were stunning works of art on the outside, consisted primarily of Cool Whip and instant pudding.

Chicken Gyros with Tzatziki

I tried my first gyro in high school. A new Middle-Eastern restaurant had come to town and one of my friends started worked there before it officially opened. I’m sure I never would’ve ordered the specialty gyros if she hadn’t come to class each day raving about how delicious they were–how the meat was perfectly seasoned and so tender it tasted like it had been slow-cooked all day long.
