Several weeks ago I posted a recipe for homemade gravlax, promising to share the recipe for my favorite creation made with the leftovers.

Leftover salmon of any kind is uncommon in my household, especially since it’s a treat that we don’t enjoy all that often. I LOVE salmon pizza, though, so sometimes I try to save a little for that purpose.

Kringla

I’ve probably mentioned that I’m Scandinavian. I’m not a full-blooded Swede or Norwegian like most of my grandparents, but I’m two-thirds Norwegian alone, with a dash of Swedish blood thrown in there for good measure. I’m the stereotypical Minnesotan girl of a century ago, only in the year 2016 and with treasured modern conveniences like heated seats and convection ovens.

Peach Cream Cheese Loaf

August means peach season to me. Peaches everywhere! Peach pie, fresh peaches in my lunchbox, peach ice cream, peach everything. I usually have a huge box of them in the house that has to be completely used up before they go bad.

Challenge accepted.

Over the course of a week or so, I’m stuffing peaches into everything that goes into my mouth like they’re about to go extinct.

Whole Wheat Pitas

I grew up watching my master-bread-baker of a grandma whip up batch after batch of perfect rye loaves. She made it look easy and I helped her often without any catastrophes.
