Event planning is one of the best parts of my nine-to-five job, and I love planning fun events just as much when I’m off the clock. Birthday parties, baby showers, holiday gatherings…I love to plan them all! I have way too many Pinboards to prove it.
Last year I had the privilege of planning a berry-themed baby shower, and it was a blast! The theme, “Blue Ras-baby,” was a play on the new mom’s name and turned out to be one of the most fun events I’ve organized.
At our brunch, we served bright Blue Raspberry Cupcakes with fresh raspberries, raspberry-topped vanilla bean cupcakes for those who wanted a simpler flavor, my cousin’s amazing white chocolate raspberry scones, “blue ras-baby lemonade,” and these cute mini yogurt parfaits.
For the parfaits, we arranged a build-your-own parfait bar with plenty of healthy and fruity toppings. Not only did it look pretty, but it was perfect for picky eaters!
I found the mini dessert shooter glasses at my local hardware store, of all places. They were on clearance, and I bought out the entire inventory!
I don’t drink alcohol, but I have a hunch that my little dessert shooters are just regular shot glasses in different packaging. If you can’t find the dessert-specific kind, browse around for anything else that may work. Mini desserts are just the cutest, and I love finding unique ways to serve bite-sized sweets! You can order several types of fun glassware online, too. Have fun with your presentation!
You can buy mini plastic or wooden spoons that are narrow enough to fit into the glassware, since regular plastic utensils won’t fit. I’ve found several pretty spoons at Target, Wal-Mart, and on Amazon.
These parfaits are incredibly simple to build. Too simple, really.
Yogurt –> granola –> berries –> done.
We used square serving bowls of equal sizes to hold the yogurt, granola, and different types of berries. I wanted blueberries, blackberries, raspberries and strawberries to fit with our theme and color scheme (bright blue and raspberry red), but anything works here! We also served almonds and pecans for guests to add to their parfaits if they wanted.
Our berry brunch parfaits turned out to be a big hit, and many guests asked for seconds. Best yet, they were a healthy choice! We had to balance out the cupcakes somehow, right? :)
Ever since buying my new stockpile of dessert shooter glasses, I’ve been obsessed with all things mini and sweet. I’ve already experimented with mini cheesecakes, mini key lime pie parfaits, and of course these berry yogurt shooters.
What are your favorite mini desserts to make? And how do you like to display them?
- 32 oz. light vanilla yogurt
- 1 1/2 cups vanilla granola or granola of choice
- 1 pint strawberries, sliced
- 1 pint raspberries
- 1 pint blueberries
- 1 pint blackberries
- Almonds or other nuts, if desired
- Layer about 1/4 cup yogurt, 1 tablespoon of granola, almonds or nuts if desired, and a small handful of mixed berries in each parfait glass.
- Serve each parfait with a narrow plastic spoon.
I like using plain vanilla granola best in this recipe, but use any kind you like! Peanut butter granola is another perfect match for the berries!
