Few of us are immune to the busyness of life. Family, friends, work, never-ending to-do lists and other responsibilities seem to control our schedules, leaving little room for rest or entertainment.
Sometimes life only seems to get busier the older I get. So often I feel like I’m sandwiched in the middle of all the busyness, struggling to find enough time to finish everything that needs to get done. To compensate, my spaces get messier, my alarm clock gets set earlier, and my meals get simpler.
This is one of the simplest meals of all.
Three ingredients. Can you handle that?
I certainly appreciate a meal that can be ready in minutes without a lot of effort!
This has long been a go-to meal for those extra-busy evenings, the kind that seem to multiply as time goes on. It uses three ingredients that I intentionally keep on hand at all times, and it’s one of the simplest recipes ever without being bland.

Chicken, soy sauce, and Italian dressing.
Throw that chicken into a gallon Ziploc, poke it a few times with a fork, pour the marinade on top, and let it sit for a few minutes–as long as you like.
Even if you just have 15 minutes to check your e-mail or throw in a load of laundry, you can let this chicken marinade for as long as time allows, then toss it on the grill for a few minutes and dig in!
My favorite way to go about making this meal is to thaw my chicken overnight (I usually keep a supply of frozen boneless, skinless chicken breasts for meals like these), let it sit in the marinade all day long, and then grill it as soon as I get home from work.
The longer you let the chicken soak in the flavors, the better it will taste! But even if you’re short on time, you’ll get a tasty meal with just a few minutes of marinating. Do whatever works best for you!
This is an embarrassingly easy meal that saves a ton of time and leaves room for more important things in life…you know, like Facebook, Netflix, and Pinterest. Right?
- 1 lb. boneless, skinless chicken breasts (about 4 breasts)
- 1/2 cup Italian dressing
- 1/4 cup soy sauce
- Poke each chicken breast with a fork a few times and place in a gallon Ziploc bag.
- Pour Italian dressing and soy sauce over chicken. Seal bag and squish with your hands to evenly distribute mixture.
- Place bag in refrigerator to marinate for a few hours or overnight (or at least for 15 minutes!).
- Preheat grill to medium heat setting.
- Grill chicken breasts for 5-7 minutes on each side or until cooked through.
The longer you marinate your chicken, the better it will taste! I like to marinate it all day while I'm at work or overnight for the strongest flavor.
